The Bikini Cocktail

Yields 10 people

To make the Clementine Cordial (yields 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Cocktail (yields 850ml, serving 10)

400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish

Instructions

For the Syrup: Place the listed items in a pot, heat until it reaches a gentle boil, mixing until the sugar dissolves. After that, turn off the burner allowing it to cool down fully. Pour into a sterilised bottle, seal and refrigerate it in the fridge, where it will keep for about one month.

Preparing the Batch Mix: Mix the specified spirits and syrup into a big jug, let it rest for an hour, then filter it preferably using a fine cloth, to ensure it's completely strained.

When ready to serve: Add 85ml of your batch mix into your stirring glass containing ice, and agitate lightly for one minute to chill. Filter into a frosted cocktail glass or similar, decorate with the cranberries and finish by giving it a quick spritz with the mandarin essence above the glass.
